Moist Banana Bread Made With No Eggs or Oil
This simple banana bread recipe is a popular one in my home. The bread turns out moist and delicious every time, even without the use of eggs or oil in the recipe. As a bonus, the aroma of the fresh baked banana bread is fantastic!
I’m not a fan of ripe bananas, but I’m also not a fan of wasting food. So, this simple bread is one of my favorite ways to make use of ripe bananas. I love that it only takes a few minutes to make the batter, and the oven takes care of the rest.

Simple & Delicious Banana Bread
This simple banana bread recipe only takes a few minutes to make the batter, and the oven takes care of the rest. The bread is moist and delicious, even without the use of oil or eggs.
Ingredients
- 1½ cups flour
- ½ cup almond meal
- ½ cup sugar
- 2 tsp baking powder
- 1 tsp cinnamon
- ¼ tsp salt
- 2 ripe bananas mashed
- 1 tsp vanilla extract
- â…“ cup greek yogurt
Instructions
- Preheat oven to 350° F. Grease bottom and sides of a 9×5-inch loaf pan.
- In a large bowl, mix the first five ingredients (dry ingredients).
- In a separate bowl, mix the mashed bananas, greek yogurt, and vanilla (wet ingredients).
- Add the banana mixture (wet ingredients) to the dry ingredients in the large bowl. Mix only until everything's blended, but don't overmix.
- Pour the batter into the loaf pan. Bake for 50 minutes, or until toothpick inserted into the center of the loaf comes out clean.
- Cool for 15 minutes. Remove from loaf pan, place on cutting board, and slice.
Notes
Regarding the batter:
When you mix the wet and dry ingredients together, the mixture will seem a bit dry and lumpy. You’ll be tempted to add milk to smooth it out, but don’t do it.
Regarding the yield:
This recipe will yield 8 (approximately 1-inch) slices per loaf. Adjust the yield based on the thickness of the slices you make.
