It’s not fall, if I’m not incorporating pumpkin into as many of our meals at home as I can 😁. I love pumpkins, and I feel there’s such a short window of time to have them easily accessible, so I try to take full advantage of that. Today, I’m sharing my easy-to-make pumpkin snack bites.

I like making snack bites throughout the year. They’re simple to make, filling, and last for a few days in the refrigerator. During fall, I like to put a pumpkin spin on them. I hope you’ll enjoy the taste of fall in these quick and easy-to-make snack!

Easy No-Bake Pumpkin Bites

These pumpkin bites are easy to make, filling, and last for a few days in the refrigerator. Basically, the best snack!

Ingredients
  

  • 1 cup oats quick cook
  • ΒΌ cup almond butter
  • ΒΌ cup mini chocolate chips semi-sweet
  • ΒΌ cup pumpkin puree
  • 1 tbsp chia seeds
  • 1 tbsp maple syrup
  • ΒΌ tsp pumpkin spice
  • ΒΌ tsp cinnamon ground

Instructions
 

  • In a medium mixing bowl, combine all ingredients.
  • With a spatula, mix all ingredients until well incorporated and the mixture has a smooth consistency.
  • Take a piece of the pumpkin mixture and roll it into a 1-inch ball, and place it in a food storage container. Continue rolling the mixture into 1-inch balls until complete.
  • Store in the refrigerator. Enjoy!

Notes

Regarding the oats:
Be sure to use quick-cook oats. Do not cook the oats prior to using in this recipe.
Regarding the yield:
This recipe yields 16 1-inch pieces. Adjust the yield based on the size of the pieces you make.
